We use natural sea bream from Ehime Prefecture. The sea bream, raised in rich waters where a culture of bream has been passed down for over 400 years, is carefully prepared by craftsmen who assess its condition each day.
Creating the foundation, which is the essence of the dish, takes a full two days. We slowly extract only the clear, inherent umami from kombu (kelp) and katsuobushi (bonito flakes).
It is this meticulous process that creates a profound depth of flavor within each can. Furthermore, for our highest-grade "Crab Shabu," three skilled craftsmen carefully peel the crab meat by hand, relying on their sense of touch to avoid damaging the delicate flesh.
We luxuriously pack the meat from 1kg of crab into one set, preparing it in a way that does not diminish the power of the ingredients. We believe that this intervention by "human hands" is the only way to preserve the soul of Japanese cuisine in a can.
