In our atelier in Sakai City, Osaka Prefecture, where we prepare our dishes, the process begins with artisans individually inspecting each large scallop that arrives from Hokkaido. The size and firmness of the scallops vary from time to time.
Instead of uniform machine processing, we manually adjust the heat and seasoning according to the condition of the ingredients. This "dialogue-like" cooking is the key to maximizing the scallop's umami without compromising its delicate texture.

We have crafted scallops, a single ingredient, into six distinct personalities so that they can be enjoyed in all situations, both Japanese and Western.

Scallop Soup (Osuimono): This uses a whole large scallop from Hokkaido. Based on dashi broth meticulously prepared by artisans, and combined with tofu, seaweed, and shiitake mushrooms, it offers a pure flavor, fitting as an authentic Japanese appetizer.

Scallops Cooked with Kelp (Konbu-ni): Using traditional Japanese techniques, scallops are simmered with vegetables, thoroughly infused with the scallop broth. This dish offers the purest taste of Japanese food culture.

Scallop Ajillo: Scallops are simmered in olive oil flavored with garlic, sealing in their umami. The rich broth melted into the oil pairs perfectly with bread and wine, adding a touch of elegance to Western dining.
