Hiroshima oysters, grown in nutrient-rich seawater, retain their plumpness even when cooked, and are characterized by a rich flavor that bursts forth the moment they are savored.

In Wanosyoku's kitchen, the process begins with selecting ingredients. Artisans carefully handle the oysters that arrive from Hiroshima, assessing their condition each day by hand.

Handling the delicate flesh, which would be damaged by mechanical processing, with the tenderness of fingertips. This intervention of "human hands" is the first step in drawing out the inherent power of the ingredients.

We offer five variations of oysters, all derived from a single ingredient, to suit various dining occasions.

 

 

Oyster Clear Soup: Features a whole Hiroshima oyster. Crafted with dashi stock patiently prepared by artisans, along with tofu, wakame, and shiitake mushrooms. Simply heat in hot water and transfer to a bowl for an authentic Japanese culinary experience.

 

 

Oyster Miso Paste: The creamy umami of oysters is condensed into a rich paste with savory miso. Perfect as a topping for rice, a dip for vegetables, or a sauce for pasta, it delivers a powerful flavor.
