Take, for example, the production process for our highest-grade "Kani Shabu." We use beni-zuwai snow crab from Kasumi, Hyogo Prefecture. Three skilled artisans meticulously peel each crab by hand, relying solely on the sense of their fingertips to avoid damaging the meat. The meat from 1 kg of crab is luxuriously used in one set, carefully preserving the texture of the "crab meat itself," not shredded meat.

Furthermore, the "dashi," which forms the backbone of the dish, is simmered slowly for a long 48 hours to extract only its clear umami. We use madai (red sea bream) nurtured in the 400-year-old tai culture of Ehime, A5-grade Kuroge Wagyu beef from Miyazaki Prefecture, and oysters nurtured in the rich waters of Hiroshima. These carefully selected Japanese ingredients are finished in individual cans using cooking methods that bring out their inherent charm, without relying on additives.

Moreover, manufacturing is carried out under strict control in our own workshop (Sakai City), adhering to solid quality standards. This sincere craftsmanship is a testament to the "trust" that allows you to safely give our products to your loved ones.
