At WANO SHOKU, three skilled artisans meticulously handle each crab.
Relying solely on the sensitivity of their fingertips, they carefully peel the meat, taking care not to damage the shell or crush the flesh. They use beni-zuwai-gani from Kasumi, Hyogo Prefecture.
This hand-peeling process is essential to deliver "the crab leg itself" rather than shredded meat, allowing customers to enjoy the texture of the crab leg as it is.
