伝統の「吉野葛」が届ける、心ほどけるひととき。職人仕立ての和のデザートという贅沢

A relaxing moment delivered by traditional "Yoshino Kuzumochi." The luxury of a Japanese dessert crafted by artisans.

In Japanese food culture, "Amami" (sweets) that conclude a meal are more than just desserts. They are like a precious ritual, quietly setting the lingering flavors of the dishes enjoyed until then and bringing peace to the mind.

Wanoshoku's "Kuzu Tofu" series is an item that embodies that tranquility.

We use "Yoshino Kuzu," cultivated in the deep mountains of Nara Prefecture, a region that has flourished as an ancient capital of Japan for centuries. With this traditional ingredient as the main focus, we have created a new Japanese sweet that aligns with modern lifestyles.

Seeking the White Treasure of Yoshino: Traditional "Yoshino Kuzu"

Kuzu (kudzu starch) is a plant that has been familiar to Japanese people since the era of the Man'yoshu.

Among them, Yoshino Kuzu from Nara Prefecture is produced using a traditional method called "Yoshino Sarashi," where it is repeatedly washed with pure underground water during the harsh cold of winter. The kuzu starch produced through this process is exceptionally pure, and when heated, it develops a jewel-like translucency and a smooth, sticky texture.

Wanoshoku generously uses this Yoshino Kuzu.

By carefully adjusting the temperature and stirring strength, our artisans create a texture that melts moistly in the mouth, much like a high-quality pudding.

By trusting the inherent power of the ingredients and taking the time to work with them, we express a "gentleness" that cannot be achieved through mechanical production.

Four Pure Harmonies that Bring Out the Life of the Ingredients

Our Kuzu Tofu is made from surprisingly simple ingredients. The main ingredient, Yoshino Kuzu, is combined with "Awa Wasanbon" sugar and carefully selected rich soy milk.

The light and elegant sweetness of Wasanbon sugar that doesn't linger, and the mellow richness of soy milk. These ingredients are meticulously kneaded by artisans while adjusting the heat, resulting in a dessert without eggs or milk. This meets the modern desire for healthy choices, with traditional Japanese ingredients quietly responding to it.

We offer four variations of flavors that symbolize Japanese aromas.

Matcha: Its rich aroma and subtle bitterness enhance the sweetness of Wasanbon.

Hojicha: Its fragrant aroma fills the senses, perfect for a peaceful afternoon.

Black Sesame: The rich sesame flavor harmonizes wonderfully with the smooth texture of Yoshino Kuzu.

Sake: Uses the famous sake "Kubota." The alcohol is removed during the cooking process, trapping only the rich aroma of sake.

At first glance, it may seem expensive for a dessert, but it is filled with the pride of its origin and the tireless handiwork of artisans.
