X3 BLANC
"X3 BLANC," produced by Kinmon Akita Shuzo in Akita, is a pure rice sake made with three times the usual amount of koji, a "triple koji brewing" method. The vibrant, citrus-like freshness of the citric acid derived from the white koji popular in shochu blends beautifully with the deep umami of the rice, creating an exceptional harmony. The juicy, mineral-rich acidity provides a sharp finish, and the appeal of this innovative umami flavor shines even more when enjoyed chilled.
When paired with the well-seasoned "Miso-marinated Wagyu Beef ," the sharp acidity from the white koji cuts through the richness of the fat, beautifully harmonizing the richness of the miso with the umami of the rice. It also pairs exceptionally well with "Sake-steamed Red Sea Bream." The acidity of BLANC complements the sweetness of the plump flesh of the sea bream, creating an elegant moment.
X3 Rose
"X3 Rose" was brewed by Kinmon Akita Sake Brewery in Akita Prefecture to break away from conventional ideas about sake. This unique sake was born from the "triple koji brewing" method, which uses three times the amount of koji as usual, and ancient rice (purple black rice) grown in Akita Prefecture. The ingredients derived from the ancient rice give the sake its unique character, which can only be brought out by strict control of temperature and time during the sake brewing process.
The liquid is a deep, lustrous amber rose color that overturns the image of clear sake. The rich aroma reminiscent of ripe berries and dried fruit is layered with the rich, rich umami flavor derived from the koji. This powerful body, similar to red wine, shows its true value when paired with stimulating food.
When paired with the "Red Sea Bream Hot Pot," which is packed with spicy kicks and the delicious flavors of seafood, the sweetness of the sake gently envelops the spiciness, creating a complex depth of flavor.
