■ X3 BLANC

This is a pure rice sake (junmai genshu) brewed using the "koji triple preparation" method, where three times the usual amount of koji is added. The refreshing acidity reminiscent of citrus, created by the citric acid derived from white koji, harmonizes wonderfully with the rich umami of the rice. The juicy, crisp acidity lightens the aftertaste, and when enjoyed chilled, its modern appeal is further enhanced.

• Wagyu Miso-Marinated Beef × BLANC The sharp acidity derived from white koji beautifully cuts through the richness of wagyu fat, creating a harmonious balance with the deep flavor of miso and the umami of rice.

■ X3 Rose

This unique sake is created using the "koji triple preparation" method, along with ancient rice (purple-black rice) from Akita Prefecture. Under delicate temperature and time control, the distinct characteristics of ancient rice are carefully brought out, resulting in a deep, amber rosé color.

It features a rich aroma reminiscent of ripe berries, layered with the robust, profound umami derived from koji. Its powerful body, similar to red wine, truly shines when paired with stimulating dishes.

• Sea Bream Hot Pot × Rose The sake's inherent sweetness gently envelops the spicy stimulation and seafood umami, creating a complex and profound flavor.
